Skipjack Noodles

Ingredient

  • 200 gr Egg Noodles
  • 150 gr Skipjack tuna
  • 1 bunch of mustard greens
  • 2 Scallions

Skipjack gravy ingredients

  • 3 cloves of garlic, crushed
  • 800 ml Water
  • 1/2 Teaspoon Salt
  • 1/2 Teaspoon Broth powder
  • 1/4 Teaspoon Pepper Powder

Chilli sauce

  • 2 Red Chili
  • 15 pieces of cayenne pepper
  • 1 clove of garlic
  • 1 Teaspoon Vinegar
  • Salt to taste
  • 2 tablespoons of skipjack gravy

Complementary

  • Fried Onions for sprinkling
  • Chilli sauce

How to make

  • 1. Steam skipjack tuna until cooked, then shred the meat. Set aside.
  • 2. Boil the noodles until cooked, remove and drain. Add a little cooking oil, stir well so it doesn't stick.
  • 3. Noodle soup: saute garlic until fragrant, add shredded skipjack tuna, mix well. Saute until the fish is browned, then add the water.
  • 4. Season with salt, pepper and stock powder, after boiling add the mustard greens and scallions, mix well. Turn off the fire.
  • 5. Sambal: boil the chili and garlic until soft, then grind it finely. Add salt, vinegar and skipjack gravy, mix well. Sambal is ready to use.
  • 6. Arrange the boiled noodles in a bowl or serving plate, flush with skipjack gravy then sprinkle with fried onions.
  • 7. Serve warm with vinegar sauce.
