Pangasius Crispy Tartar Sauce

Ingredients

  • 450 gr Pangasius Fillet @seafoodlovers.japfa
  • 2 cloves of garlic, finely
  • 1/2 tsp stock powder
  • 1/2 tsp pepper powder
  • 1/2 tsp coriander powder

Dry Layer

  • 100 gr chakra flour
  • 2 tbsp cornstarch
  • 1 tsp broth powder

Wet Layer

  • 1 Egg, Whisk Off

Tartar Sauce

  • 2 cloves of garlic
  • 1/2 onion
  • 2 pieces of cayenne pepper
  • 1 sachet salted egg seasoning, ready to use
  • 150 ml liquid milk
  • 3 tbsp mayonnaise
  • 1/2 tsp dry parsley
  • Sugar, salt and powdered broth to taste

How to make

  • 1. Cut Pangasius Fillet according to taste. Mix with marinade, let stand for 30 minutes.
  • 2. Coat in flour, dip into beaten egg, coat again in flour while pinching to make it curly.
  • 3. Fry until browned over medium heat, remove and drain.
  • 4. Tar Tar Sauce: saute garlic, onion and cayenne pepper until fragrant. Add salted egg seasoning, liquid milk, sugar, salt and powdered stock.
  • 5. Add mayonnaise and parsley, mix well. Cook until thickened and boiling, remove from heat.
  • 6. Serve Crispy Pangasius with Tar Tar Sauce.
