oseng spicy tutut

Ingredients

  • 1 crackle snail tutut (bought the tail already cut)
  • 2 rs of galangal

Ground spices

  • 8 cloves of red onion
  • 3 cloves of garlic
  • 15 pcs cayenne pepper
  • 8 pcs red curly chili
  • 2 rs of galangal
  • 1 rs ginger

Other Seasonings

  • tbsp salt
  • tbsp mushroom broth
  • 1 tbsp sugar
  • 1 tsp coriander
  • tsp ground pepper
  • 2 bay leaves
  • 3 lbs of lime leaves
  • 2 stalks lemongrass
  • Sweet soy sauce to taste (about 2 tbsp)
  • Oyster sauce to taste (about tbsp)
  • Note: the amount of seasoning is adjusted to the amount of water and ingredients used

Method

  • 1. Wash the tutut snail then boil the tutut for a while with slices of galangal then drain and wash again
  • 2. Saute ground spices together with bay leaves, lime leaves and lemon grass until fragrant
  • 3. Add sugar, salt, ground pepper, coriander powder and mushroom broth, stir until the spices are cooked
  • 4. Enter the snail tutut and mix evenly with the spices
  • 5. Add oyster sauce, sweet soy sauce and enough water
  • 6. Taste correction and ready to serve
