Orange Leaf Turmeric Fried Rice

Ingredients

  • 1 plate of rice
  • 8 medium size prawns
  • 1 tbsp Fried anchovy
  • 1 carrot cut into squares
  • Fried onions
  • 3 kaffir lime leaves, finely sliced
  • 3 pieces of red curly chili, cut into pieces
  • 1 tsp fish sauce
  • 1 tsp salt
  • 1 tsp mushroom stock
  • 1/2 tbsp sugar
  • 1/2 tsp pepper
  • Oil for frying

Ground spices

  • 5 red onions
  • 3 cloves of garlic
  • 3 cm turmeric
  • 1 piece of roasted hazelnut

How to cook

  • 1. Saute ground spices with lime leaves and chilies until fragrant, add carrot and shrimp pieces, stir until cooked
  • 2. Add salt, mushroom broth, sugar, pepper, fish sauce, mix well again
  • 3. Add rice, stir until well blended
  • 4. Serve with a sprinkling of anchovies and fried onions
