1. Wash the snapper, and coat with lemon, leave for 10 minutes. rinse again
2. Coat the fish with oyster sauce
3. Sprinkle chopped garlic, ginger slices, cayenne pepper, coriander root, brown sugar, chicken stock powder, thai fish sauce, some scallions and lemon juice. Steam the fish for 20-25 minutes.
4. Remove the fish and sprinkle with sliced cilantro and spring onions. Serve
