Yellow Lempah / Pineapple Lempah Fish

Ingredients

  • Mackerel Head and Tail
  • 1 pineapple
  • 8 pieces of red chili
  • 1 1/2 tsp salt
  • 1 tsp mushroom stock
  • 2 tbsp sugar
  • Adequate tamarind water (added if the sauce is less sour)
  • 1800 cc of water

Ground spices

  • 10 pieces of curly red chili
  • 6 red bwg
  • 4 white bwg
  • 1 thumb turmeric
  • 2 stalks lemongrass
  • 1 segment of galangal
  • 1 tbsp shrimp paste
  • 2 hazelnuts

How to cook

  • 1. Clean the fish
  • 2. Cut the spices, add a little water, puree (I use a chopper @mitochiba.id @mito.id)
  • 2. Saute the spices without oil, until the water dries up
  • 3. Add water, after boiling, add pineapple, salt, sugar, & mushroom seasoning. Cook until the pineapple is soft.
  • 4. Enter the fish & red cayenne pepper, cook until cooked, serve
