Ingredient

  • 4 mackerel fish
  • Banana leaf
  • Lime juice
  • 1/4 tsp salt
  • Right amount of oil

Subtle Seasoning Ingredients

  • 4 cloves garlic
  • 8 red onions
  • 5 grains of roasted hazelnut
  • 5 red chilies
  • 3 red curly chilies
  • 1 slice of galangal
  • 1 slice ginger
  • 1/2 tsp salt (to taste)
  • 1/2 tsp mushroom stock

Additional Ingredients

  • Basil leave
  • 4 lemongrass stalks finely chopped
  • Bay leaf

How to make

  • -Wash the fish clean then drain and add salt and lime juice. Set aside
  • -Heat 2 tablespoons of cooking oil then stir-fry the ground spices and lemongrass until fragrant and wilted
  • -After the spices have cooled, add the basil leaves and mix well
  • -Prepare 2 seasoning leaves, fish and bay leaves, then roll them up and wrap them in peppers
  • -Prepare the steamer and then steam the fish for 30 minutes or until cooked
  • - Burn the fish over coals to make it more fragrant then serve with warm rice
