Egg Fried Sambal

Ingredient

  • 10 hard-boiled eggs, peeled
  • 1 bay leaf
  • 1 lemongrass stalk, crushed
  • 2 segments of galangal, geprek
  • Salt & sugar to taste
  • 200 ml medium coconut milk
  • Enough water
  • Oil for frying

Ground spices

  • 5 cloves of red onion
  • 5 cloves of garlic
  • 5 pecans
  • 7 red chilies
  • 1 cm turmeric
  • A little shrimp paste (optional)

How to make

  • 1. Fry the eggs until they are crusty, remove and set aside.
  • 2. Saute ground spices until cooked, then add coconut milk, salam, lemon grass, galangal, salt & sugar, stir.
  • 3. Add eggs, stir. Cook until the spices absorb & the water shrinks.
