Every person should know how to cook, and especially how to cook safely. 600 gr Country chicken thigh (or other parts according to taste)
1/2 Tbsp Lime Juice
5 g Galangal, bruised
1 tsp Pepper Powder
2 tbsp Sweet Soy Sauce
1 tbsp Tamarind Water
1/4 tsp Salt
1 tsp Mushroom Broth
200 ml Water (add water if using free-range chicken)
Cooking Oil for frying
Ground spices
6 pcs Shallots
3 cloves of Garlic
6 pcs curly red chili (if you like it spicy, you can add cayenne pepper)
1/2 tsp Roasted Coriander
7 g Ginger
Spread Ingredients
1 tbsp Margarine
1 tbsp Honey
1 tbsp Sweet Soy Sauce
Leftover chicken ungkep seasoning

Chili shrimp paste
Chili sauce, soy sauce

How to make
1. Cut the chicken thighs into 2 parts, then wash with running water. Season the chicken with a little salt and lime juice. Let stand 15 minutes, wash again and drain.
2. Heat cooking oil, saute ground spices until fragrant. Add galangal and ground pepper. Cook the spices until done.
3. Enter the sweet soy sauce, tamarind water and water. Bring to a boil, add salt and mushroom stock. Mix well & adjust seasoning.
4. Enter the chicken thighs, ungkep for 15 minutes or until the chicken is tender, the spices are absorbed and the sauce is reduced. Lift
