Ingredients

  • 1 kg chicken thigh fillet, cut into squares
  • 3 tbsp soy sauce @kikkoman.id
  • 1 tbsp cooking sake/mirin (can be skipped)
  • 1 tbsp grated ginger
  • 2 cloves of grated garlic
  • 1 tsp sugar
  • 1 egg
  • 3 tbsp cornstarch
  • 3 tbsp all-purpose flour
  • 3 tbsp Kentucky Crispy Seasoning Flour @dapurkobe

How to make

  • 1. Marinate the chicken with soy sauce, sake/mirin, grated ginger, grated garlic, sugar, stir well, let stand min. 1 hour
  • 2. Drain the remaining marinade, add the egg into the chicken and coat with the flour, cornstarch and seasoning flour mixture.
  • 3. Heat the oil over medium heat. Cook the chicken using the double frying method so that it stays crisp. So first it is half cooked then remove, drain and fry again until cooked. The result will be more crispy compared to one fry.
  • 4. Drain using kitchen tissue.

  • - 1/4 cup cabbage (thinly sliced)
  • - 2 pcs carrots (cut into matchsticks / shaved)

  • – 3 tablespoons white vinegar (I used lime juice instead)
  • – 150 ml of water
  • – 2 tbsp sugar
  • – 1/2 tsp salt

mayonnaise

  • – 3 tbsp full mayo
  • – 1 tbsp tomato sauce
  • – 1/2 tsp chili sauce
  • – 1 tbsp SKM
  • - 2 tablespoons water (I skipped)
