Ingredient

  • 250 gr melinjo skin, sliced
  • 50 gr penja anchovies (if you don't have one you can replace it with other dry anchovies)

Spice

  • 3 cloves of red onion
  • 3 cloves of garlic,
  • 50 gr handheld cayenne pepper
  • 1 tsp Salt/to taste
  • tbsp sugar/to taste
  • 1 tsp Mushroom broth/to taste
  • tsp pepper powder/to taste
  • 3 large green chilies, sliced
  • Thumb of galangal, slice

Method

  • 1. Boil the melinjo skin slices and add salt, drain when it is cooked
  • 2. Finely chopped onion, garlic and cayenne pepper
  • 3. Fry the anchovies until they are brown/cooked, then set aside
  • 4. Saute the ground spices together with galangal, until cooked
  • 5. After the spices are cooked, mix it with the fried anchovies.
  • 6. Enter the melinjo kulis, stir evenly, add salt, sugar, powdered broth, and ground pepper
  • 7. Add enough water to absorb the spices.
  • 8. After mixed well and the water is a bit sat, add the large green chili slices.
  • 9. Correct the taste, if it doesn't fit, you can add dry spices
  • 10. Remove and prepare warm rice.
