Ingredients

  • 1/4 kg Mahi Mahi fillet
  • 2 chopped tomatoes
  • Whole cayenne pepper adjust to taste
  • 2 stalks of kecombrang flowers, cut into 2
  • Bay leaf
  • To taste salt / mushroom broth

Ground spices

  • 5 grains bawmer
  • 4 cloves bawput
  • 1 turmeric finger
  • 1/2 finger kencur
  • 1 finger galangal
  • 1 finger ginger
  • Cayenne pepper according to taste
  • A little coriander seeds & peppercorns
  • 1 lemongrass stalk
  • 2 hazelnuts
  • 1 sachet of instant shrimp paste
  • Sufficient gummer

How to cook

  • Saute the ground spices until fragrant and cooked, remove and set aside (if you don't want it to be oily, you can skip this stage of frying)
  • Marinate the fish with spices, place the bay leaf in an aluminum cup, then arrange the fish, kecombrang flowers, tomatoes and whole chilies, alternating until all the ingredients are used up.
  • Steam the fish until cooked, if it is cooked immediately remove it from the steamer, serve warm
