Chinese Special Fried Noodles

Noodle Ingredients

  • 250gr medium protein flour
  • 1 egg yolk water (weighed to 110gram)
  • 1/4 tsp turmeric powder
  • 1/4 tsp salt

How to Make Noodles

  • 1. Mix flour, turmeric powder, and salt, mix well. Add egg yolks and water, knead by hand until smooth.
  • 2. Divide the dough into 2, round it. Cover with plastic wrap, rest 2 hours so that the texture is soft and the gluten is completely mixed.
  • 3. Roll it to the desired thickness.
  • 4. Cut according to taste. Sprinkle flour so it doesn't stick.
  • 5. Bring the water to a boil, add 1 tablespoon of oil and a little salt. Boil noodles for 2 minutes, then remove and soak in ice water.
  • 6. Drain, grease with a little oil. Yellow noodles are ready to be processed, if not, store them in the refrigerator.

Note

  • 1. Yield, approximately 400gram.
  • 2. Can use a noodle mill.
  • I'm manual because I only make a few. If in large quantities, it is recommended to use a milling machine so you don't get tired of grinding it.

Ingredients for Fried Noodles

  • 400 gr yellow noodles/wet noodles
  • 1 bunch caisim slices
  • 200 gr minced chicken
  • 2 eggs beaten off
  • 4 tbsp cooking oil for frying

Spice

  • 5 cloves of garlic finely chopped
  • 2 tbsp oyster sauce
  • 2 tbsp sweet soy sauce
  • 2 tbsp soy sauce
  • 2 tbsp fish sauce
  • 2 tbsp sesame oil
  • 2 tsp salt
  • 2 tsp sugar
  • 1/2 tsp pepper

How to Cook Fried Noodles

  • 1. Sauté the garlic until fragrant, add all the spices and then the chopped chicken, stir-fry the eggs until cooked.
  • 2. Enter the noodles, stir well and taste caisim.
  • 3. Once cooked serve with pickled cucumber and cayenne pepper.
