Ingredients

  • 700 gr chicken, cut according to taste
  • 600 ml thin coconut milk
  • 100 ml thick coconut milk
  • 500 gr potatoes, peeled and cut into small pieces / according to taste
  • 2 bay leaves
  • 2 tsp salt
  • 2 tsp sugar
  • 1/2 tsp curry powder

Refined Material

  • 8 dried chilies, wash and soak in hot water until soft, discard the water
  • 2 large red chilies, remove seeds
  • 5 red onions
  • 3 cloves of garlic
  • 1/2 of turmeric
  • 1/2 segment of galangal
  • 1 lemongrass stalk (take the white part)
  • 3 hazelnuts
  • 1/2 tsp coriander
  • 1/2 tsp white cumin

How to make

  • 1. Fry the potatoes until they are skinned, remove and set aside.
  • 2. Saute ground spices and bay leaf until fragrant and oil comes out, add chicken, stir until chicken changes color, pour thin coconut milk. Cook while stirring until it boils then add the potatoes. Add salt, sugar and curry powder. Cook until the chicken and potatoes are quite tender.
  • 3. Pour thick coconut milk, cook while stirring until it boils, remove and serve.
