Spicy Egg Curry

Ingredient

  • 5 boiled eggs
  • 12 pieces of fried tofu
  • 65 ml thick coconut milk
  • 300 ml water
  • 2 lemongrass stalks, crushed
  • 2 bay leaves
  • 3 lime leaves
  • 2 tbsp oil, for frying
  • 1 tsp broth powder
  • 1 tsp sugar,
  • 1 tsp salt

Ground spices

  • 8 cloves of red onion
  • 4 cloves garlic
  • 4 pecans, roasted
  • 2 cm roasted turmeric
  • 1 cm ginger
  • 1 cm galangal
  • 1 tsp coriander
  • 5 pieces of red chili
  • 5 pieces of cayenne pepper

How to cook

  • 1. Heat oil, saute ground spices until fragrant, add bay leaves, lemongrass and lime leaves.
  • 2. Add tofu & eggs, add water, sugar, salt and powdered stock, stir briefly, cover, let the spices infuse and the water shrinks a bit.
  • 3. Finally add thick coconut milk, let it boil, taste, remove from heat.
