Ingredients

  • 750gr fish, cut into pieces, sprinkle with lime.
  • 3 lime leaves, stems removed, finely sliced
  • 2 lemongrass stalks, finely sliced.
  • 1 lime
  • 1 scallion thinly sliced
  • 1 handful of basil leaves
  • 1 sheet of turmeric leaf thinly sliced
  • 1 pandan leaf thinly sliced
  • 1 sliced ​​tomato
  • Sugar to taste
  • salt and pepper to taste

Ground spices

  • 2 cm turmeric
  • 2 cm ginger
  • 8 cloves of red onion
  • 10 red chilies
  • 2 roasted hazelnuts

Method

  • 1. Saute ground spices until fragrant.
  • 2. Enter the lime leaves, turmeric leaves, pandan leaves, lemon grass, tomatoes.
  • 3. Once fragrant, add the fish. Cook until well done. Add sugar, salt. Taste correction.
  • 4. Just before serving, add lime juice, add scallions and basil.
