Ingredient
- 250 gr beef brisket (can be deep)
- 200 gr Lung (if you like you can use offal; intestine, liver & tripe)
- 2 stalks Lemongrass, geprek
- 3 cm Galangal, bruised
- 2 lbs bay leaf
- 4 lbs of lime leaves
- 3 btr Cardamom
- 2 pcs Lawang Flowers
- 3 cm Cinnamon
- 3 cloves
- 2 tsp sugar
- 1 tbsp Salt
- Water to boil
- 3 tbsp cooking oil for frying
Ground spices
- 6 pcs Shallots
- 3 cloves of Garlic
- 3 pieces of roasted hazelnut
- 2 cm Grilled Turmeric
- 2 cm Ginger
- 1/2 tsp Pepper granules
Complementary
- Fried onion
- Celery, finely sliced for sprinkling
- Hard-boiled eggs, cut in half
- Lime
- Cayenne pepper sauce (10 pcs cayenne pepper + 1 curly chili + 1 clove of garlic, boiled & mashed with a little salt & sugar)
- Prawn crackers
How to make
- 1. Boil the lungs for 15 minutes, remove & discard the boiled water. Then boil again until cooked & tender. Lift & drain. Slice thinly, set aside.
- 2. Bring 2 liters of water to a boil, boil the meat until it is half tender along with cardamom, cloves, star anise & cinnamon. Remove the meat, drain. Slice thinly & put back into the broth.
- 3. Heat cooking oil, saute ground spices until fragrant. Add galangal, lemon grass, bay leaves & lime leaves. Stir until fragrant & the spices are cooked, remove and add to the beef stew.
- 4. Enter the lungs, add sugar & salt, stir. Cook until the meat is tender. Taste correction. Lift
- 5. Arrange Soto Eldest in a serving bowl, then serve warm along with the complement.
