Is Bekakak Chicken Spicy?
Bekakak Sundanese chicken is a whole grilled chicken with complete spices. it tastes savory spicy and even more delicious after being burned with charcoal fire.
What does Brother mean?
Bekakak means a victim of animal or human slaughter. because of its shape like someone sitting cross-legged, it is called chicken bekakak and in Sundanese it is called bakakak.
Materials
- • 1 chicken (me 1200 grams)
- • 2 lemons/lime
- • 1 tbsp coriander (roasted)
- • 3 candlenuts (roasted)
- • 5 cloves of red onion
- • 4 cloves garlic
- • 1 segment of young galangal
- • a pinch of ginger
- • 1 knuckle of turmeric
- • 2 large red chilies
- • 4 curly red chilies (you can add more if you like spicy)
- • 1 pack of instant coconut milk 65ml
- • 400-500ml water
- • enough oil for frying
- • 3 bay leaves
- • 4 lime leaves
- • 1 lemongrass stalk
- • 1 tsp salt
- • 1 tbsp sugar
- • 1 tbsp brown sugar
- • 3 tablespoons of sweet soy sauce (if you like it sweet you can add more)
- • 1 tsp chicken stock
How to make
- 1. Wash the chicken and then cut the breast into two parts but don't break it. Then coat with lime or lemon juice. Let stand for 20 minutes if you want to cook the chicken, wash it thoroughly in running water so that the chicken will not be sour later
- 2. Puree the candlenut, coriander, Bamer, Baput, ginger galangal and chili
- 3. Heat enough cooking oil then saute the spices that have been mashed. Enter the orange leaves, bay leaves and lemongrass that have been crushed. Saute the spices until cooked and cooked
- 4. When it is cooked, add water, chicken stock, salt, soy sauce, sugar and coconut milk. Mix well then add the chicken face down. Cook until the gravy shrinks
- 5. Prepare teflon or burning. Bake or roast the chicken with the remaining sauce or spices that you can rub on the surface of the chicken to make it more fragrant.
