Materials

  • 300 grams of chicken
  • 1/4 lime/lemon
  • 200 ml water
  • 4 cloves of red onion
  • 2 cloves of garlic
  • 6 small green tomatoes
  • 2 bay leaves
  • 4 lime leaves (remove bones)
  • 1 lemongrass, bruised
  • 5 pieces of cayenne pepper (or more)
  • 1 piece of ginger
  • 1 segment of galangal
  • 3 tbsp cooking oil for frying
  • Enough water to boil chicken
  • To taste salt, sugar, and powdered broth/mushroom stock

Step

  • Wash the chicken that has been cut into pieces. Sprinkle with lime/lemon juice and a little salt. Leave it for 10 minutes. Then boil until only half cooked. Lift and drain. Then take 250 ml of the broth
  • Prepare the seasoning. Chop the onion, garlic, ginger, galangal, and tomato. I don't use starfruit because I can't find . But it's okay 😊
  • Prepare a frying pan and heat the oil. Saute onion, garlic, ginger, galangal, lemon grass, bay leaf, and lime leaves until fragrant and quite wilted. But don't let it get too dry
  • Enter the plain water and 250 ml of the broth. Then add the drained chicken. Season with salt, a little sugar and powdered stock. Cover the pan and cook until the chicken is cooked. Don't forget to taste correction.
  • After that, add the chopped green tomatoes, and the whole cayenne pepper. If you like spicy you can add it. Stir well and cook again for about 5 minutes. Turn off the heat and serve😘. good luck
