What is Kebuli Rice?

Kebuli rice is a rice dish rich in spices with a distinctive aroma and savory taste. This dish, which is identical to the Middle East, is very popular among Betawi residents as well as Arab descent communities in Indonesia.

Ingredient

  • 1 kg basmati rice
  • 1 kg meat/beef ribs/goat
  • 2 lemongrass stalks, crushed
  • 1 onion, sliced
  • 6 cloves
  • 3 cardamoms
  • 10 cm cinnamon
  • 150 ml thick coconut milk
  • 1/2 tsp nutmeg powder
  • 3 pieces of flower
  • 3 bay leaves
  • 1 tbsp curry powder
  • Salt, sugar & pepper powder
  • 3 tbsp ghee
  • Enough water

Ground spices

  • 7 cloves of red onion
  • 7 cloves of garlic
  • 1 tsp cumin
  • 1 tbsp coriander
  • 1 piece of ginger
  • 3 segments of turmeric

  • Onions, saute for a while

How to make

  • 1. Sauté (with ghee) ground spices, onions, nutmeg powder and curry powder until cooked, add meat/ribs, stir briefly then add water. Enter the bay leaf, lemon grass, cardamom, star anise, cloves, cinnamon, salt, sugar and pepper powder, stir. After the meat is tender, add the coconut milk, stir. After boiling, turn off the heat, take the meat and fry. Save the water to cook the rice.
  • 2. Soak the rice for 30 minutes, rinse, drain.
  • 3. Prepare a pan (I use a rice cooker), add the rice and water from the meat stew. The amount of water is the same as cooking ordinary rice (plus plus about half a glass). Then cook as usual until cooked.
  • 4. Serve the rice with the meat and accompaniments.
