Serani Milkfish Ingredients

  • 1 whole milkfish (300 g), cut into 4 parts
  • 1/2 tsp turmeric powder
  • 1 tsp salt
  • 1/2 pc tomato, sliced
  • 2 pcs star fruit wuluh, sliced
  • 2 tbsp sour water
  • 1 tbsp brown sugar
  • 500 ml water

Spice

  • 2 cloves garlic, sliced
  • 3 pcs red onion, sliced
  • 3 pcs cayenne pepper, sliced
  • 2 pcs red curly chili, sliced
  • 1 stalk lemongrass, geprek
  • 1 segment of galangal, geprek
  • 1 lb bay leaf
  • 2 lbs lime leaves

How to Make Milkfish Serani

  • * wash the milkfish, drain. Sprinkle with salt and turmeric powder, let stand at least 10 minutes
  • * saute the spices until fragrant, add water, tamarind water and brown sugar. Let it boil
  • * Enter the milkfish, star fruit and tomatoes, cook until the fish is cooked, taste test. Add salt and stock if necessary. Lift, serve warm
