Ingredient

  • 1 Mackerel Fish, Cut into Slices

Marinated Seasoning

  • bks koji amino by @_koh.jie
  • tbsp turmeric powder

Ground spices

  • 10 cloves of red onion
  • 5 cloves of garlic
  • 20 pcs red chili
  • 2 large red chilies
  • 10 pcs red curly chili

Other Seasonings

  • tbsp salt
  • tbsp mushroom broth
  • tbsp sugar
  • 1 -2 tbsp sweet soy sauce
  • 4-5 lbs of lime leaves
  • 2 rs of galangal, geprek
  • Note: the amount of seasoning is adjusted according to the number of ingredients used

Method

  • 1. Clean the fish, then add the koji amino by @_koh.jie and turmeric powder, give enough water and stir until evenly distributed, then fry the fish. (No need to add salt, seasoning or anything else, because it's already very tasty)
  • If you don't have one, you can marinate with lime juice, turmeric powder and salt
  • 2. Saute the spices with lime leaves and galangal until cooked
  • 3. Enter the fish that has been fried and stir gently.
  • 4. Add sugar, salt, mushroom broth, sweet soy sauce and enough water and mix well again
  • 5. Correct the taste and ready to serve
