Clam Dara With Padang Sauce

Ingredient

  • 2 kg of scallops, clean brush
  • 1 onion, sliced
  • 2 spring onions, cut into pieces
  • 2 segments of ginger, crushed
  • 1 egg, beaten
  • 1 tbsp sugar
  • 1 tsp mushroom stock powder
  • 1/2 tsp salt
  • 1/2 tsp pepper powder
  • 250ml water

Shellfish Stew Ingredients

  • 2 liters of water
  • 4 cloves of garlic, crushed
  • 2 fingers of ginger, crushed
  • 2 tsp salt
  • Ground spices :
  • 10 cloves of red onion
  • 4 cloves garlic
  • 7 large red chilies
  • 7 curly red chilies
  • 5 pieces of red chili
  • Right amount of oil

Sauce (Mixed 1)

  • 5 tbsp chili sauce
  • 2 tbsp tomato sauce
  • 2 tbsp oyster sauce

How to make

  • 1. Boil clams with boiled ingredients until the shells open, drain & clean again with running water.
  • 2. Saute ground spices until fragrant, add onion & ginger, stir-fry again until fragrant.
  • 3. Add water, add sauce & seasoning, stir well until boiling.
  • 4. Enter the eggs while continuing to stir quickly.
  • 5. Add the clams, cook until the spices are absorbed & the water is slightly reduced.
  • 6. Finally, add the scallions.
  • 7. Adjust taste & serve.
