Ingredient

  • 1 ekr free-range chicken, cut into pieces
  • 500 ml water

Ground spices

  • 6 cloves of garlic
  • 4 cloves of red onion
  • 1 tsp coriander
  • Thumb of ginger

Other Seasonings

  • tbsp salt
  • tbsp mushroom broth
  • tbsp sugar
  • tbsp pepper powder
  • 1 tsp tamarind
  • 150 gr brown sugar (3 blocks of brown sugar)
  • 4 rs of galangal, geprek
  • 4-5 lb bay leaves
  • Note: the amount of seasoning is adjusted according to the number of ingredients used

Method

  • 1. Clean the chicken, set aside
  • 2. Puree all the spices, then stir-fry with enough oil
  • 3. Enter the bay leaf and geprek galangal, stir-fry until the spices are cooked
  • 4. Add water then add the free-range chicken
  • 5. Enter the tamarind, brown sugar, mushroom broth salt, granulated sugar, ground pepper
  • 6. Stir well until the spices are evenly mixed with the chicken
  • 7. Leave until the chicken is cooked and the water is sat.
  • 8. Fry the chicken until brown
  • 9. Serve with hot chili sauce and rice
