Ingredients

  • 500 gr tilapia
  • 1 tsp salt
  • 1 lime

Fish Marinade

  • 2 cloves of garlic, puree
  • 1 tsp coriander powder
  • 1/2 tsp turmeric powder
  • 1 tsp salt

Mango Sambal

  • 1 young mango, peeled and cut into matchsticks
  • 1 tbsp tomato sauce
  • 1/2 tsp brown sugar
  • 1 tbsp tamarind water
  • 1 tsp sugar
  • 1/2 tsp salt
  • 1/2 tsp stock powder
  • 100 ml water
  • Oil for frying

Ground spices

  • 4 cloves of onions
  • 2 cloves of garlic
  • 2 red chilies
  • 3 pieces of curly chili
  • 3 pieces of cayenne pepper
  • 1/2 tsp grilled shrimp paste
  • 2 pecans

How to make

  • 1. Coat the fish with salt and lime, let stand 10 minutes. Then wash the fish thoroughly.
  • 2. Cover the entire body of the fish with the marinade seasoning, let stand for 30 minutes.
  • 3. Fry the fish in hot oil until the fish is cooked and browned. Remove and set aside
  • 4. Mango Sambal: heat the oil, stir-fry the ground spices until fragrant, add the tomato sauce, brown sugar and tamarind water, mix well. Pour water then add salt, powdered broth and sugar and cook until it boils and cook until slightly thickened.
  • 5. Enter the young mango, mix well. Turn off the fire
  • 6. Arrange the fish on a serving plate, put the mango sauce on it.
