What is Kalio Jengkol?

Ingredient

  • -1 kg jengkol
  • -2 bay leaves
  • -3 sheets of lime leaves
  • -1 stalk lemongrass, bruised
  • -3 cm galangal, bruised
  • -1 pcs Kandis acid
  • -3 cardamom seeds
  • -1 pcs deaf
  • -1btg cinnamon
  • -1 tbsp palm sugar
  • -salt, sugar and powdered broth to taste
  • -500ml thin coconut milk
  • -250 ml thick coconut milk

Ground spices

  • -10 cloves bamer
  • -7 cloves baput
  • -10 pcs curly chili
  • -5 pcs cayenne pepper
  • -3 candlenuts
  • -3 cm turmeric
  • -2 cm ginger
  • -1 tsp coriander

How to cook

  • -boil jengkol with black coffee (to reduce the thick jengkol smell) and 1 tablespoon salt, boil until soft, wash, drain. Then flatten the jengkol with a pestle 1 by one, so that the texture is softer and the spices are easily absorbed

  • - add thin coconut milk, add jengkol, cook until the water shrinks a little
