Cilok Ingredients

  • 400 gr chicken breast
  • 400 gr tapioca flour
  • 100 gr wheat flour
  • 5 cloves of garlic, puree
  • 3 egg whites
  • 1 scallion
  • 200 ml ice water
  • Salt, pepper and stock powder to taste
  • 150 gr brisket, boil and set aside the broth
  • 20 whole chilies
  • 1 lb lime leaves

Ground spices

  • 5 cloves of red onion
  • 3 cloves of garlic
  • 5 pieces of curly chili
  • 15 pieces of cayenne pepper

How to make

  • 1. Put all ingredients except tapioca flour in a food processor, process until smooth.
  • 2. Transfer to a bowl, mix with tapioca flour, knead lightly until it becomes a dough that can be shaped.
  • 3. Round shape, put in hot water, do it until it runs out.
  • 4. Boil the cilok meatballs until they float and are cooked, remove and drain. Set aside.
  • 5. Fry the ground spices and lime leaves until fragrant, add the broth, meat, sugar, salt and powdered stock to taste, cook until the spices are absorbed.
  • 6. Enter the cilok meatballs, spring onions and chili paste, cook until boiling, remove from heat.
  • 7. Serve with a sprinkling of spring onions and pilus.
