Egg Tofu Curry Ingredients

  • 10 large pieces of tofu
  • 7 eggs, boiled
  • 4 lime leaves
  • 3 bay leaves
  • 2 stalks lemongrass, crushed
  • 2 segments of galangal, geprek
  • 1 tbsp Curry powder @demaderaasid
  • 1 tbsp Chili powder @demaderaasid
  • salt and sugar to taste
  • 5 cloves of garlic, thinly sliced ​​(fried for sprinkling)
  • 500 ml water
  • 500 ml medium thick coconut milk

Ground spices

  • 8 curly red chilies
  • 4 large red chilies
  • 6 cloves of red onion
  • 5 cloves of garlic
  • 1 tsp roasted coriander
  • 4 pieces of roasted hazelnut

How to Make Egg Tofu Curry

  • 1 Wash and clean the tofu, cut into pieces and fry half cooked, set aside
  • 2 Fry hard-boiled eggs until they are crusty, set aside
  • 3 Saute ground spices, lime leaves, bay leaf, geprek lemongrass and geprek galangal until fragrant
  • 4 Then add tofu and eggs, add water, cook until boiling
  • 5 After boiling, add coconut milk, De' Maderaas curry powder, Chili powder, salt and sugar to taste, stir occasionally so that the coconut milk does not break, taste test
  • 6 After the water has shrunk a little and the spices have absorbed, remove and serve with a sprinkling of fried shallots
