5 cloves of garlic, thinly sliced (fried for sprinkling)

500 ml medium thick coconut milk

8 curly red chilies

How to Make Egg Tofu Curry
1 Wash and clean the tofu, cut into pieces and fry half cooked, set aside
2 Fry hard-boiled eggs until they are crusty, set aside
3 Saute ground spices, lime leaves, bay leaf, geprek lemongrass and geprek galangal until fragrant
4 Then add tofu and eggs, add water, cook until boiling
5 After boiling, add coconut milk, De' Maderaas curry powder, Chili powder, salt and sugar to taste, stir occasionally so that the coconut milk does not break, taste test
6 After the water has shrunk a little and the spices have absorbed, remove and serve with a sprinkling of fried shallots
