Ingredient

  • 250 gr lung
  • 6 bay leaves
  • 6 lime leaves
  • 1 lemongrass, crushed
  • 2 fingers of ginger, crushed
  • Salt, sugar, mushroom broth to taste
  • 5 tbsp all-purpose flour (diluted with a little water)

Ground spices

  • 6 cloves of garlic
  • 1 tbsp coriander powder
  • 1/2 tsp turmeric

Tomato Sauce Ingredients

  • 6 cloves of fried onions
  • 1 clove of garlic
  • 5 red chilies
  • 2 large tomatoes
  • 20 pieces of cayenne pepper
  • 1/2 piece of shrimp paste abc
  • 1 tbsp brown sugar
  • Salt, sugar, mushroom broth to taste

Step

  • Boil the lungs with bay leaves, lime leaves, lemongrass, ginger, salt, sugar, broth for about 15 minutes, then cut the lungs thinly, apply the ground spices, boil again until the lungs are soft and the water runs out.
  • • Dip the lungs into the flour, fry in hot oil on medium heat until the flour is crispy.
  • • make tomato sauce: fry onions, tomatoes, red chilies, just a little bit of cayenne pepper, then grind coarsely fry again add brown sugar, granulated sugar, salt, stock, mix well, taste test when it's just turn off the heat.
