Ingredient

  • 1 cup Japanese rice, wash and drain
  • 1.5 cups water (me: mushy because using 2 cups)
  • Cook in a rice cooker until done.
  • 2 sheets of nori, size 20x20cm, divided into 2 parts.
  • For the sauce, I use Mamasuka hotlava sauce

Sushi Vinegar

  • 2 tbsp rice vinegar
  • 1 tbsp sugar
  • 1 tbsp boiled water
  • 1/2 tsp salt
  • Stir until sugar is dissolved.

Stuffing Ingredients

  • 8 pieces of crabstick, just boil it for a while
  • 1/3 zucchini (me: no, just use regular cucumber) 😂 remove the middle and cut the matchstick lengthwise
  • 1/3 carrot, sliced ​​lengthwise

Tempura Dough

  • 100 gr wheat flour
  • 220 gr ice water
  • 1/2 tsp salt
  • 1/4 tsp mushroom stock
  • 1/2 tsp baking soda mixed with 1 tsp vinegar
  • Mix all ingredients well.
  • Fry in plenty of hot oil, flush from a slightly higher distance from the oil. Not too much for one fry. After golden brown, remove and drain.

How to make

  • 1. Mix the cooked rice with the sushi vinegar mixture then cover with a damp cloth so the rice doesn't dry out.
  • 2. Prepare a sushi mat, cover it with plastic so it doesn't stick. Take 1 sheet of nori, put the rice on it. Flatten but don't press. Sprinkle with black sesame seeds. Turn the rice upside down, before that the plastic wrapping of the sushi mat is smeared with water so that the rice doesn't stick. Arrange the stuffing, tempura crumbs, hot lava sauce, then roll while solidifying. Cut, serve. (before cutting, the knife is smeared with water first so it doesn't stick)
