Ijo Sambal Chicken

Ingredients

  • 500g Chicken
  • 5 cloves of red onion
  • 4 cloves garlic
  • 1 medium size tomato
  • 100 grams of curly green chili
  • Chicken broth
  • Salt
  • Sugar
  • Oil for frying and sauteing
  • Enough water
  • 1 plantain (optional)

How to make

  • 1. Wash the chicken and then coat it with 1 tsp of chicken stock and let it rest for about 15 minutes
  • 2. If the chicken is fried until brown, remove and drain
  • 3. Prepare the ground spices, Shallots, Garlic, tomatoes and chilies, steamed for about 5 minutes or until just cooked. Puree
  • 4. Heat the oil for frying the spices that have been mashed earlier, don't take too long because the spices are already cooked, then add enough water, 1 tsp of chicken stock, a pinch of salt, 2 tsp of sugar, mix well. If it's evenly distributed, add the fried chicken and the map
  • 5. Cook for about 3 minutes until the bananas are slightly wilted.
  • 6. Peak green chili chicken served with warm rice
