Pecak Sambal Penyet Chicken
Ingredients for Chicken Pecak Sauce
- 2 pieces of ungkep chicken thigh
- 15 pieces of green chili
- 5 pieces of red chili
- red tomato, cut into small pieces
- green tomato, cut into small pieces”
- 5 whole red onions, fry until wilted
- 1 clove of red onion, thinly sliced
- 1 clove garlic, thinly sliced
- powdered broth to taste
- salt to taste
- right amount of oil
How to Make Chicken Pecak Sauce
- 1. Fry the chicken until dry and cooked, set aside
- 2. Grind green chilies, red cayenne pepper and fried whole red onions, add powdered stock and salt. Grind according to taste (could be coarse/fine)
- 3. Enter the tomatoes, then pulverize "just a little, don't make it too smooth
- 4. heat the oil, fry the sliced onion and garlic until brown.. then pour it into the ulek chili sauce.. stir well
- 5. Stir fried chicken and serve with chili sauce
Unkep Chicken Seasoning
- 1 chicken, cut into 4 parts
- 1 lemongrass stalk, crushed
- 2 bay leaves
- 4 lime leaves
- powdered broth to taste
- salt to taste
- right amount of oil
- enough water
Ground spices
- 8 cloves of red onion
- 6 cloves of garlic
- 1 piece of ginger
- 1 segment of galangal
- 2 segments of roasted turmeric
- 2 tsp roasted coriander
- 2 grains of roasted hazelnut
How to make
- 1. Heat the oil, stir-fry the ground spices, bay leaves, lime leaves and lemongrass until fragrant and cooked
- 2. Enter the chicken pieces, cook until it changes color
- 3. Add enough water, until the chicken is submerged
- 4. check the taste, if it is just right.. cook the chicken until the water is reduced and the spices are absorbed (while stirring occasionally)
- 5. Remove and fry the chicken until dry and cooked
