- 500 gr fresh squid
- 1 tbsp lime juice
- 1/2 pc Onion, cut into squares

- 2 pcs red chili, sliced oblique
- 2 green tomatoes, cut each into 4
- 2 lbs bay leaf
- 3 lbs Jeruk Leaves, torn
- 3 cm Galangal, thinly sliced
- 2 tbsp Oyster Sauce
- 2 tbsp Sweet Soy Sauce
- 1/2 tsp Pepper Powder
- Salt, Sugar and Mushroom Broth to taste
- 150 ml Water
- 1 tbsp Margarine for frying
How to make
- 1. Wash the squid with running water slowly so that the head does not come off. Add lime juice, leave for 10 minutes. Rinse gently with running water. Gently remove the head so that the ink sac does not burst, set aside. Cut the squid into rings (if you like you can leave it whole)
- 2. Melt margarine, saute garlic until fragrant. Add shallots, onions, galangal, lime leaves and bay leaves, stir-fry until fragrant
- 3. Add green chilies, red chilies and cayenne pepper (if using). Add oyster sauce, water and sweet soy sauce. Cook until boiling.
- 4. Increase the heat of the stove, add the squid, ground pepper, salt, sugar and mushroom stock, mix well. Add the green tomatoes, cook for a while, until the spices are absorbed and the sauce thickens slightly. Taste correction.
