Curry Bamboo Shoots/tubis
Ingredient
- 550 gr bamboo shoots/tubis
- 65 ml thick coconut milk
- 3 bay leaves
- 4 lbs lime leaves
- 3 cm galangal crushed
- 3 pcs tamarind patikala geprek
- 100 gr chicken cut into pieces
- Salt, mushroom broth, sugar, water to taste
Ground spices
- 10 pcs curly red chili
- 10 pcs red chili
- 3 sticks of candlenut
- 6 cloves of red onion
- 3 cloves of garlic
- 2 cm turmeric
The method
- 1. Boil the bamboo shoots until cooked and then rinse with clean water. Drain well
- 2. Saute the ground spices until fragrant, add the bay leaf, lime leaf, galangal, tamarind patikala, stir well, cook the spices until cooked.
- 3. Pour enough water, let it boil, add the boiled bamboo shoots, chicken pieces, add salt, mushroom broth, sugar, & coconut milk while stirring so that the coconut milk doesn't break.
- 4. Cook until cooked and the spices are absorbed, taste correction. Lift and serve while warm
