curry bamboo shoots/tubis

Ingredient

  • 550 gr bamboo shoots/tubis
  • 65 ml thick coconut milk
  • 3 bay leaves
  • 4 lbs lime leaves
  • 3 cm galangal crushed
  • 3 pcs tamarind patikala geprek
  • 100 gr chicken cut into pieces
  • Salt, mushroom broth, sugar, water to taste

Ground spices

  • 10 pcs curly red chili
  • 10 pcs red chili
  • 3 sticks of candlenut
  • 6 cloves of red onion
  • 3 cloves of garlic
  • 2 cm turmeric

The method

  • 1. Boil the bamboo shoots until cooked and then rinse with clean water. Drain well
  • 2. Saute the ground spices until fragrant, add the bay leaf, lime leaf, galangal, tamarind patikala, stir well, cook the spices until cooked.
  • 3. Pour enough water, let it boil, add the boiled bamboo shoots, chicken pieces, add salt, mushroom broth, sugar, & coconut milk while stirring so that the coconut milk doesn't break.
  • 4. Cook until cooked and the spices are absorbed, taste correction. Lift and serve while warm
