Ingredients

  • 450 gr rice
  • 800 ml medium coconut milk
  • 700 ml of water
  • 2 bay leaves
  • 1 tsp salt
  • Banana leaf

Contents

  • 250 gr peeled chicken/meat/shrimp breast, chopped (I used shrimp)
  • 2 potatoes, cut into small cubes
  • 4 cloves of red onion, puree
  • 4 cloves of garlic, puree
  • 2 red chilies, thinly sliced
  • Salt & sugar to taste
  • Less water
  • Oil for frying

How to make

  • 1. Bring coconut milk and water to a boil, add bay leaf & salt, then add rice. Stir until the water shrinks then turn off the heat. Set aside.
  • 2. Filling: saute onion & white until cooked then add chicken/meat/shrimp, stir briefly then add a little water. Add potatoes, salt, sugar and red chilies. Cook until cooked & the water is reduced.
  • 3. Take a piece of banana leaf, sprinkle with rice (while pressing it a little so that it is solid), then put the filling on top, compact it & roll it up. Pin it with a stick. Steam until cooked about 1 hour.
