Ingredient

  • 500 gr chicken cut to taste
  • 3 pairs of gizzard hearts, cut according to taste
  • 4 tbsp sweet soy sauce
  • 1 tsp oyster sauce
  • 2 bay leaves
  • 2 lbs lime leaves
  • 1/4 tsp pepper powder
  • Salt, brown sugar, mushroom broth, water to taste

Ground spices

  • 6 cloves of red onion
  • 3 cloves of garlic
  • Slice of ginger
  • 13 pcs red chili
  • 7 pcs curly red chili

The method

  • 1. Wash the chicken pieces & gizzard liver until clean then coat with lime mix well, let stand 10 minutes then rinse with clean water drain
  • 2. Cook chicken & liver gizzard in boiling water until half cooked. Remove rinse with clean water drain.
  • 3. Saute ground spices until fragrant, enter the bay leaf, lime leaves, mix well. Pour enough water, add salt, sweet soy sauce, oyster sauce, mushroom broth, brown sugar, pepper powder, mix well.
  • 4. Enter the chicken stew & gizzard liver, stir well, cook until cooked and the spices are absorbed. Taste correction. Remove and serve with warm rice
  • NOTES:
  • The chicken can be fried for a while after being boiled, it just changes color az, I make the chicken soy sauce a bit wet/gravy. The gravy when stirred with rice is good
