Crispy Tempe Sambal

Ingredients

  • 400 gr tempeh
  • 25 gr crispy chicken flour
  • 1 bunch of basil, take the leaves
  • Right amount of oil

Sambal Ingredients

  • 2 large tomatoes, cut into 4
  • 5 cloves of garlic
  • 3 red onions
  • 10 pieces of cayenne pepper
  • 5 pieces of curly chili, cut into pieces
  • 1 small sachet of shrimp paste
  • 1 tsp chicken flavoring or can be replaced with salt
  • 1 tbsp brown sugar
  • 1 tsp sugar

How to make

  • 1. Steam the tempeh for 10 minutes then remove and puree. Add flour and mix until smooth. Shape the tempeh with 2 tablespoons into an oval then fry briefly until slightly brown, remove and set aside.
  • 2. Sambal: heat a frying pan, add 2 tablespoons of oil, then add tomatoes, shrimp paste, onions and chilies, saute until wilted then add seasoning or salt. Stir until fragrant, then remove.
  • 3. Pour the chili mixture with the stir-fried oil in the mortar, add sugar and then grind until smooth. Add tempeh and basil, beat again until everything is evenly mixed.
  • Sambal tempe is ready to be served with fried Pete and fresh vegetables.
