Terasi Sambal Ingredients

  • 2 cloves of garlic
  • 5 pcs Shallots
  • 5 pcs curly chili
  • 2 red chilies, remove the seeds
  • 7 pcs Cayenne Pepper (adjust to taste)
  • 2 pcs medium size tomatoes, cut into 2
  • 1 tsp grilled shrimp paste
  • 1/2 tsp Sugar
  • Mushroom Broth, to taste (skip if you don't like it)
  • Salt to taste
  • 2 tbsp hot cooking oil

How to make

  • 1. Fried Chicken: wash the chicken, coat it with lime juice. Let stand 15 minutes, wash again & drain.
  • 2. Mix the ground spices with grated galangal
  • 3. Put the chicken, ground spices, coconut water and other spices into the container/pan. Cover the container and uncover the chicken until it is tender and the water shrinks using low heat. Lift and drain.
  • 4. Heat cooking oil, fry chicken until golden brown. Lift and drain
  • 5. Sambal Terasi: briefly fry the garlic, shallots, curly chilies, red chilies, cayenne pepper and tomatoes.
  • 6. Prepare a mortar, grind the fried chili ingredients, add the shrimp paste, salt, sugar and mushroom broth, mix well. Flush with hot oil. Add lime juice.
  • 7. Letakkan ayam goreng di atas sambal, tekan/penyet perlahan dengan ulekan.
  • Sajikan Ayam Penyet dengan lalapan.
