Material contents

  • 1 kg /155gr Sardines, separate the fish from the sauce & clean the bones
  • 1 tg scallion, finely sliced
  • 2 pcs cayenne pepper, finely sliced ​​(according to taste)
  • 2 pcs red onion, finely sliced
  • 1/4 of an Onion, chopped
  • 1/8 tsp Pepper powder
  • Salt, Sugar & Mushroom Broth to taste
  • Oil for frying

How to make

  • 1. Heat the oil, fry the shallots, onions & chilies until fragrant. Add sardines & ground pepper, mix well.
  • 2. Add 2 tablespoons of sardine sauce, salt, sugar & mushroom broth, mix well. Taste correction. Add the scallions, cook until the gravy shrinks
  • 1. In a bowl mix all ingredients (except butter & salt). Knead until smooth
  • 2. Add butter & salt, knead until elastic. Press the dough, release the gas. Divide & weigh the dough @ 45gr, round it up
  • 3. Take 1 dough, flatten it, give the filling. Close tightly & round. Do it until the dough runs out. Cover with plastic, let stand until doubled in size (+- 45 min)
  • 4. Heat the cooking oil, use medium heat, which tends to be low.
  • 5. Dip bread in egg white, coat with breadcrumbs. Immediately put into the frying pan. Once golden brown on one side, flip the bread once. Lift and drain.

Bread Ingredients

  • 225 gr high protein flour
  • 25 gr medium protein flour
  • 20 gr Sago tani
  • 25 gr milk powder
  • 40 g fine granulated sugar
  • 1 tsp instant yeast
  • 1 whole egg + 1 egg yolk
  • 100 ml cold liquid milk
  • 40 gr Butter
  • 1/2 tsp Salt
  • Oil for frying

Upholstery

  • Egg whites
  • Bread crumbs
