Ingredients
- 1 free-range chicken, cut into pieces
- 50gr fiber creme / 65 ml instant coconut milk / 1500 ml coconut milk from 1 coconut
- 2 lemongrass stalks, crushed
- 2 bay leaves
- 2 lime leaves
- 1 finger of ginger, crushed
- 3 cm galangal, geprek
- 1 index finger cinnamon
- 1/2 small size brown sugar
- Salt & mushroom stock powder, to taste
- 6 tbsp oil for frying
- 1500ml – 2000ml water
Ground spices
- 8 cloves of red onion
- 5 cloves of garlic
- 2 hazelnuts
- 1.5 tsp coriander granules
- 1/2 tsp pepper powder
- 1 cm turmeric/ 1/2 tsp turmeric powder
How to make
- 1. Boil the chicken for a while -/+ 10 minutes, discard the cooking water & set aside.
- 2. Heat cooking oil, saute ground spices until fragrant.
- 3. Enter the lemongrass, bay leaf, lime leaves, galangal & cinnamon, stir-fry again until fragrant.
- 4. Enter the chicken, stir with the spices until well blended then add water & seasoning. Cook over medium heat, which tends to be low while covering it so that it is soft & the savory broth comes out for 30 minutes.
- 5. Open the lid, turn up the heat. When the spices are absorbed and the chicken is tender, add the fiber creme. Stir well.
- 6. Correct the taste & serve with a sprinkling of fried onions.
