Egg Petis

Ingredient

  • 7 chicken eggs, boiled and peeled
  • 2 tbsp black petis (sweet peris)
  • 100 ml thick coconut milk (1 small schet dissolved in 50 ml water)
  • 100 ml water
  • 5 pieces of cayenne pepper
  • 2 pieces of kaffir lime leaves
  • 2 bay leaves
  • 1 lemongrass stalk, bruised
  • 1 piece of ginger, bruised
  • 1 tsp salt

Ground spices

  • 4 cloves garlic
  • 3 cloves of red onion
  • 2 grains of roasted hazelnut
  • 2 pieces of curly chili
  • 2 tbsp oil for frying

How to make

  • - saute ground spices until wilted, add bay leaf, lime leaf, lemongrass, ginger, chili, stir fry until fragrant.
  • - Enter the eggs, coconut milk, petis, water and salt, cook until boiling and thick.
  • Tip: if using red petis then add 2 tablespoons of sweet soy sauce and 1 teaspoon of brown sugar to the dish.

There are 2 kinds of petis

  • – petis red ( petis madura): brown, salty taste and a little tough texture.
  • – petis black (petis surabaya): black in color, sweet taste and slightly soft texture.
