Eggplant Balado Ebi

eggplant balado ebi

Ingredient

  • 500 gr purple eggplant (pot according to taste)
  • 30 gr ebi (soak in hot water)
  • 8 curly red chilies
  • 5 cloves of red onion
  • 4 cloves bwng pth
  • 1 small tomato
  • Brown sugar/sugar to taste
  • Broth powder to taste (don't use salt anymore because the ebi is salty)
  • Cooking oil

How to make

  • Blender finely / semi-coarsely chili, onion and tomato, set aside
  • Fry the eggplant until brown, set aside
  • Sauté the ground spices until fragrant and cooked, add the ebi, stir-fry, season with brown sugar and powdered broth, saute until fragrant and oil comes out, add the fried eggplant, stir, turn off the heat, ready to serve.
