Eggplant Balado Teri Medan

eggplant balado teri medan

Ingredients

  • 350 gr Eggplant (5 pcs eggplant)
  • 2 cm Galangal, bruised
  • 40 gr Medan anchovies, soak in hot water for 15 minutes then drain
  • Salt, Sugar and Mushroom Broth to taste
  • Oil for frying

Ground spices

  • 6 pcs Shallots
  • 3 cloves of Garlic
  • 8 pcs red chili
  • 4 pcs curly red chili
  • 2 pcs Cayenne Pepper (adjust to taste)
  • 1 pc roasted hazelnut
  • 1 pc medium tomato
  • 1/4 tsp grilled shrimp paste

Steps

  • 1. Fried Teri Medan until cooked and dry, remove & drain. set aside
  • 2. Eggplant split into 2, then bake until half cooked using a Teflon grill (or you can use the oven). Remove and set aside.
  • 3. Heat enough cooking oil, saute ground spices until fragrant. Add the galangal, stir until the spices are cooked.
  • 4. Add eggplant, fried anchovies (reserve for sprinkling), salt, sugar and mushroom stock.
  • 5. Stir until the spices evenly coat the eggplant and taste correction.
  • 6. Remove and arrange on a serving plate. Add a sprinkling (leftover) of fried anchovies and serve.
