Ingredient

  • 1.5 kg chicken cut to taste
  • 2 stalks spring onions cut long
  • 5 lbs lime leaves
  • 3 cm galangal crushed
  • 1 bunch of basil take the leaves
  • 1 stalk lemongrass, crushed
  • 1 pc lime
  • Salt, mushroom broth, sugar, water to taste

Ground spices

  • 5 pieces of candlenut
  • 12 cloves of red onion
  • 5 cloves of garlic
  • 10 pcs curly red chili
  • 30 pcs mixed cayenne pepper
  • 2 cm ginger
  • 1/2 thumb turmeric

How to Process

  • 1. Wash the chicken pieces and coat them with lime juice with a little salt. Stir well, let stand 15 minutes then fry until half cooked. Raise set aside
  • 2. Sauté ground spices until fragrant, add lime leaves, galangal, lemongrass, mix well. Add water, salt, mushroom broth, sugar, mix well
  • 3. Enter the fried chicken, stir well and cover, use low heat so that the spices absorb. Cook until cooked/tender
  • 4. Enter the chopped scallions, basil, stir briefly then taste correction. Remove, serve with warm rice
