Ingredient

  • 1 large kg/425gr Sardines from @bantan.id
  • 1 btg Lemongrass, geprek
  • 2 cm Galangal, crushed
  • 2 lbs of lime leaves
  • 1 pc Green Tomato, cut into 2
  • 1 pc Red Tomato, cut into 2
  • 1 pc green chili, cut into slices
  • 1 pc red chili, cut into slices
  • 7 pcs whole chili
  • 1 pack/65ml Instant coconut milk
  • 350 ml Water
  • Salt, Sugar & Mushroom Broth to taste
  • Basil leaves to taste
  • Oil for frying

Ground spices

  • 5 pcs red onion
  • 3 cloves of garlic
  • 6 pcs curly chili
  • 3 pcs cayenne pepper (according to taste)
  • 1 cm Kencur
  • 1.5 cm Roasted Turmeric
  • 2 pcs roasted candlenut

How to make

  • 1. Separate the sardines from the sauce, clean the fish from the seasoning with water. Drain well
  • 2. Heat cooking oil, saute ground spices until fragrant. Add lemon grass, galangal & lime leaves, stir until the spices are cooked
  • 3. Pour water, cook until boiling. Add coconut milk, green chilies, red chilies, cayenne pepper, cook until boiling over low heat while stirring. Add salt, sugar & mushroom broth, mix well. Correct taste
  • 5. Enter the sardines, cook until the spices are absorbed & the sauce thickens. Finally add the tomatoes & basil leaves, let the tomatoes wilt. Remove
