Unkep Chicken Seasoning Ingredients

  • 1 chicken, cut into 4 parts
  • 1 lemongrass stalk, crushed
  • 2 bay leaves
  • 4 lime leaves
  • powdered broth to taste
  • salt to taste
  • right amount of oil
  • enough water

Ground spices

  • 8 cloves of red onion
  • 6 cloves of garlic
  • 1 piece of ginger
  • 1 segment of galangal
  • 2 segments of roasted turmeric
  • 2 tsp roasted coriander
  • 2 grains of roasted hazelnut

How to Make Unkep Seasoning

  • 1. Heat the oil, stir-fry the ground spices, bay leaves, lime leaves and lemongrass until fragrant and cooked
  • 2. Enter the chicken pieces, cook until it changes color
  • 3. Add enough water, until the chicken is submerged
  • 4. check the taste, if it is just right.. cook the chicken until the water is reduced and the spices are absorbed (while stirring occasionally)
  • 5. Remove and fry the chicken until dry and cooked

Ijo Sambal Ingredients

  • 50 green chilies (can be reduced)
  • 4 cloves of red onion
  • 2 cloves of garlic
  • 1 lime
  • Powdered broth to taste
  • Salt to taste
  • Sugar to taste
  • Hot cooking oil to taste

Solution

  • 1. Fry the chicken until dry and cooked.. Remove and set aside
  • 2. Fry the green chilies and onions until wilted
  • 3. Grind the chilies and onions according to taste.. If I like it a bit rougher
  • 4. Grind the sambal together with the powdered broth, salt and sugar until smooth
  • 5. Add lime juice, mix well
  • 6. Penyet / press the chicken until it crumbles a little.. Then serve it with chili sauce on top of the chicken
