- 500 gr beef
- 3 lbs bay leaf
- 1 segment of galangal bruised
- Enough water to boil
other ingredients
- 5 cm Cinnamon
- 1 pc of flower
- 2 pcs Cardamom
- 5 cloves
- 2 stalks Lemongrass, bruised
- 5 lbs lime leaves
- 1 lb turmeric leaves
- 4 pcs bay leaf
- 3 tbsp rice flour
- 2 pcs kandis acid
- Skewers
Ground spices
- 30 gr Garlic
- 50 gr red onion
- 5 pcs red chili
- 2 segments Ginger
- 2 segments of Galangal
- 2 sections of roasted turmeric
- 1 tsp Curry Powder
- 1/2 btr Pala
- 1 tbsp Roasted Coriander
- 1 tsp Pepper
- 1/2 tsp roasted cumin
- Salt
- Sugar
Complementary
- Ketupat/lontong
- Fried onion
- Sliced cayenne pepper (if you like)
How to make
- 1. Rebus semua bahan daging, hingga daging setengah empuk & tdk berdarah lagi. Angkat & tiriskan, lalu potong dadu sesuai selera. Air kaldunya utk membuat kuah sate padang. Sisihkan
- 2. Panaskan minyak goreng, tumis bumbu halus hingga harum bersama kayu manis, bunga lawang, kapulaga & cengkih.Tambahkn serai,daun jeruk,daun kunyit & daun salam, tumis hingga bumbu benar2 matang. Angkat, bagi 2 bagian.
- 3. Ambil 1 bag.bumbu, campur dg daging. Pindahkan ke panci tambahkan air panas secukupnya hingga daging terendam. Masak/ungkep daging hingga empuk & bumbu meresap.Angkat & tiriskan.
- 4. Tata daging dlm tusukan sate. Lakukan hingga habis. Panggang sate sebentar diatas bara/wajan anti lengket. Angkat.
- 5. Kuah: ambil 1 bag. bumbu sisanya, masukkan ke air rebusan daging, tambah asam kandis, masak hingga mendidih. Masukkan tepung beras yg sdh dilarutkan dg sedikit air. Aduk2 terus (agar tdk menggumpal) hingga kental & meletup-letup.Koreksi rasa, angkat.
- Penyajian : Tata Sate Padang dlm piring saji, tuang kuah diatasnya. Beri taburan bawang merah goreng & irisan cabe rawit. Sajikan segera dg irisan ketupat atau lontong.
