Kakiage Tempura

Ingredients

  • 2 pcs carrots (140 g)
  • 1 pc onion (130 g)
  • 1 pc sweet potato (150 gr)
  • 20 pcs chickpeas (190 g)
  • 3 tbsp wheat flour
  • Enough oil for frying

Liquid Coating Flour (Mixed)

  • 10 tbsp wheat flour
  • 4 tbsp cornstarch
  • 3/4 tsp salt
  • 1/2 tsp vetsin/broth powder (can skip)
  • 1/2 tsp baking powder
  • 250-300 ml ice water

Sauce

  • 175 ml water
  • 1 tsp dashi
  • 2 tbsp mirin
  • 3 tbsp soy sauce
  • 2 tsp sugar

How to Cook

  • 1. Sauce: mix all ingredients in a saucepan, bring to a boil, set aside
  • 2. In a bowl, mix all the vegetables, add 3 tablespoons of flour, mix well, add liquid coating flour, mix well
  • 3. Prepare the kakiage mold (see video), heat the oil, fry the tempura until cooked, serve with the sauce.
