Ati Fried Sambal

Ingredient

  • 300 gr chicken liver and gizzard
  • 3 lemongrass stalks, crushed
  • 2 medium size potatoes
  • 1 plantain, peeled, take seeds
  • 2 stalks lemongrass geprek
  • 2 bay leaves
  • 4 lime leaves
  • 1 segment of galangal
  • 2 tbsp coconut milk
  • 250 ml water
  • To taste salt, sugar and mushroom broth

Ground spices

  • 7 cloves of red onion
  • 4 cloves garlic
  • 5 large red chilies
  • 3 pieces of curly red chili
  • 1 cm ginger
  • 1 segment of turmeric
  • 2 pecans
  • 1/2 tsp pepper

How to make

  • 1. Wash the chicken liver, then boil it until it boils. Discard the water, replace it with new water, boil the new water again, add the lemongrass, cook until cooked and soft. Then drain. Fry briefly in hot oil and cut according to taste.
  • 2. Peel the potatoes and wash them, cut them according to taste. Then fry until cooked, remove and drain.
  • 3. Saute the ground spices until fragrant, enter the lime leaves, bay leaves and lemongrass, cook until the spices are cooked.
  • 4. Add chicken liver and french fries. Stir well .
  • 5. Pour water and add coconut milk. Add salt, sugar and powdered broth. Cook until the spices absorb and thicken. Turn off the fire
  • 5. The fried liver sauce is ready to be served.
