Ingredients

  • 200gr Baby Squid
  • 100gr Large Anchovy
  • 50gr of small Medan anchovies
  • 5 Pete boards
  • 200gr Shallot
  • 100gr Garlic
  • 200gr Red Chilli
  • 100gr Red Curly Chili
  • 5gr Grilled Terasi (mashed)
  • 15gr brown sugar
  • 1 tbsp Sugar
  • 1 tbsp Mushroom Broth
  • 2 tsp Salt
  • 1 stalk lemongrass
  • 5 lime leaves
  • 400ml Oil for sauteing chili
  • Enough oil for frying

How to cook

  • 1. Clean the baby squid, rinse again with warm water, drain
  • 2. Wash large anchovies and small anchovies, drain
  • 3. Fry alternately, Red Bwg, White Bwg, Chili, Anchovy and Squid, Drain
  • 4. Blend each Bwg and Chili (according to taste for the level of smoothness)
  • 5. Heat the oil, add the Bwg² and Chili that have been in the blender. Add lime leaves, lemongrass, shrimp paste, mix well
  • 6. Add salted squid, sugar, mushroom broth, salt and brown sugar, mix well, cover (cook for 25 minutes) (stir occasionally)
  • 7. Add anchovies and Pete, mix well, cover (cook for 15 minutes) (stirring occasionally)
  • 8. For more durability, store in a clean airtight container and put it in the refrigerator.
